Have you tried Sublime Text? Predictable low latency is one of the reasons I like it.

I get stutters with Sublime Text on my ancient MacBook Pro, but I'm often crushing the io systems (like a big Dropbox resync at the same time as a database compaction), so that may explain some of it.
