NOAA's GHCN web portal has "Add to Cart" next to the records. Are there any free climate data regarding ocean temps with a paper trail of the measurements and any "updates" that might have been done over the years?

Here's a global gridded data set:
https://cds.climate.copernicus.eu/cdsapp#!/dataset/insitu-gr...
from which you can easily extract ocean temperature data from 1750 onwards, including links to documentation of input data sets:
