How do you know that it should have taken all day?

Who said that it should've taken 1 day? Was it your own estimation, your manager's, or Scrum Master's ;) Maybe the same or similar task took 1 day in the past?

Even if you really got lucky on one task in the project by saving 7 hours, you might got bitten and stuck on another one, which will take weeks more than was estimated.

Software time estimation isn't an exact science, and it's more like statistics, i.e. you need lots of datapoints, and look at them in the aggregate (e.g. run Monte Carlo simulation).
