Pattern Recognition and Machine Learning - Bishop
Deep Learning - Goodfellow, Bengio, Courville
Neural Smithing - Reed, Marks
Neural Networks - Haykin
Artificial Intelligence - Haugeland
(there's also "Elements of Statistical Learning" which is a more advanced version)
