When you interview somebody you might work with then you want to ask them about the technology in your area and their experience in that area. Ask them some basic stuff about your tech space then ask them to talk about a problem they've solved recently in that space. If they have that experience then when you deep dive into it then it's like a problem solving discussion. Stuff you expect of them to know about they should know and it'll allow them the give you some idea of their experience.
