I really love to ask this question during interviews too. Usually, it helps people to shine and get comfortable.
In my case, I'm really proud of the Design System I created for my company. When I arrived, the company had multiple websites and all of them had their own similar styleguides. It was complex to manage them and almost impossible to keep consistent.
I presented all the variations of the different UI components in the different sites to the team. They all understood the situation and allowed me to work on a Design System. It wasn't the most complext project I've worked on, but seeing other teams working with the Design System and enjoying creating websites with it was amazing.
This was my first project in the company and the impact was big. I couldn't be more happy with the result :)
