I was with you until the last sentence. The best way to respond to rudeness is clearly and politely, unless they're screaming, berating, or threatening you. If you make a habit of responding to rudeness by acting politely, you will impress everyone other than the perpetrator(s).



It is possible to stand up and tell the interviewer (while he's in mid-sentence) that it's not a fit, politely.


Maybe we have different ideas of what qualifies as polite, but standing up and interrupting someone mid-sentence seems rude to me.
