Trilium is the only note-taking application I've ever truly been happy with. I can run it in docker on my server, sync to it on the desktop apps, while keeping a local copy on each device; while still being able to access it via a subdomain on my website from anywhere in the world. That's just the syncing part; take a look at the full list of features [0]. (Disregard the screenshots; the master branch has not updated its screenshots as 0.48.0 is still in beta).
It also allows exporting a static zip with the HTML, with the full directory structure shown on the side. Nice to be able to export my notes and be able to publish them online (though zadam is working on something better than manually exporting)
