They have physical buttons for super critical stuff like aborts (the large handle between seats 2 and 3 in the center and deploying parachutes along the bottom below the touch screen. Touchscreens cuts down on the weight and space requirements a lot too and interfaces can adapt to include more or less information as the mission demands.
