My employment agreement at last three companies says they own any intellectual property I create on or off business hours with or without using company equipment. Whether or not its related to the current business.

Not a lawyer, but certainly sounds overbearing and probably not enforceable.

you should talk to a lawyer. If your employer is going to take it, why bother? If not, go for it!
