Is it possible to decap a processor without damaging it? (ie. so it will continue to work) If you could do that, then you could attempt to probe the unencrypted data or the key.

Yes. Probing at 14nm is immensely challenge but seemingly possible (see, eg, http://dcgsystems.com/products/nanoprobing/nprober-ii/ which looks terribly expensive!)

Though I don't think it would allow you to probe the unencrypted data or the key. Not at the connectors to the crystal, at least: it is still encrypted there.
