Can anyone explain why is Apple so opposed to having different browser engineson iOS? Is it really just about security? I don't understand what is Apple to gain by not allowing 3rd party engines everywhere in the world.
Controlling the only browser engine on the most important end user OS means Apple has a veto on what can be done with the web platform in practice. If they want to press a pillow on the face of the web and watch it desperately struggle for air, they can.
And of course they want to do that. What is good for the web is bad for Apple. They need web apps to be unviable to maximise the platform lock-in and the rents they can extract via the App Store.
("They" being senior Apple leadership; I'm sure the people working directly on WebKit are doing the best they can given their resource constraints and strategic guidance.)
With every new iPad they release I'm hopeful they add a support for virtualization. If I could run linux in a docker on an iPad I would switch to it as my main computing instantly, but as of right now I don't see a reason to upgrade what's basically a glorified ebook reader and Netflix player.

I'm surprised that noone came up with a free (libre) alternative to reddit where each subreddit would be a deployable standalone server. Or is there a project like that that I'm unaware of?
For me the limited customization is a feature. I am a very undecisive person and a lot of configuration options give me anxiety. I like the approach of having great defaults and the limited numer of options (with some customization possible via extensions) give me freedom to not have to worry about the desktop I'm using and just focus on the task at hand.
I really tried to make dark mode work for my text editor because I think it looks better, but for some reason I can't. When using dark mode I squint my eyes more, they get tired more easily and sometimes I even get a headache. This doesn't happen with light mode, I can look into the screen for 8 hours straight and I'm totally fine, so the exact opposite of what most people say.
Same here. I tried multiple times (low contrast, high contrast) because I love the aesthetic and also I usually write code in dark but when looking at a dark theme for more than 5 minutes I start to get dizzy, my eyes hurt, I get a headache. I always assumed it was because if my astigmatism, even got correcting glasses but no luck. I ended up with light theme, low brightness and Flux.
One thing keeping me from using Firefox full-time is that when using heavier web applications like Google Cloud Console or Stackdriver it always hangs, shows a warning that the webapp is taking too long and asks me if I want to wait or stop it. This happens every time I try to load something. I looked for a way to disable this behavior but with no luck.
